Muesli


In August, we spent a Saturday with friends Rosie and Gene exploring the Bear Lake region of Idaho. On the way, Gene stopped in the small town of Bancroft, Idaho to buy some freshly milled oats from the Alexander Company. $20 bought us a fifty pound bag of oats that we split. 25lbs of oats is a lot of oats! Clark keeps bugging me to give some of them away but I think I'll be able to use them up before they go bad. I made a double batch of muesli to eat with my morning yogurt using the recipe below. It is based on the Muesli mix that I buy at Winco in thier bulk section. You could substitute any dried fruit or nuts you have on hand.

INGREDIENTS

  • 4 1/2 cups rolled oats
  • 1/2 cup toasted wheat germ
  • 1/2 cup wheat bran
  • 1/2 cup oat bran
  • !/2 cup
  • 1 cup raisins
  • 1/2 cup chopped almonds
  • 1/4 cup raw sunflower seeds

DIRECTIONS

  1. In a large mixing bowl combine oats, wheat germ, wheat bran, oat bran, dried fruit, nuts, and seeds. Mix well. Store muesli in an airtight container. It keeps for 2 months at room temperature.
