Curried Lamb and Lentil Stew

Today was a crisp, sunny, lazy October Sunday calling for something simple but hearty.   This stew is an easy to prepare, delicious "one pot affair"  I've made before. A bowl of this stew is also easy to eat in front of the TV, an important consideration during  baseball playoffs especially when  the New York Yankees are involved.  We ate it with toasted slices of Asiago sour dough bread from Great Harvest Bread and a salad of mixed greens. The recipe comes from Cooking Light. The only change I made to the orginal recipe was to add a 10 oz. package of frozen spinach, which I had on hand, rather than the fresh spianch called for in the recipe.
