Julie's Oatmeal Coconut Gluten Free Cookies

A year ago my niece, Julie was diagnosed with Celiac disease. During my recent visit, Julie and I spent an afternoon in the kitchen. While I made applesauce, she made gluten free cookies. I have to admit the idea of cookies made without wheat flour wasn't all that appealing, but as a cook I was intrigued. "Where did you get the recipe?",  I asked. "I started from a Taste of Home recipe", she said, " and changed it."  Now that's a true cook!    Other than the proportions, the recipe is very different from the original.  The cookies turned out great! I'd serve them without comment or apology and bet few folks would be able to tell they were gluten free.
Here's Julie's Recipe:

2/3 cup butter softened
2/3 cup brown sugar
1 1/2 cups oats
1 1/2 cups gluten free flour (general purpose)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup shredded coconut
1/2 cup white chocolate chips
1/4 c molasses

Cream butter and sugar. Add eggs and molasses. Mix. Add oats, flour, salt, baking soda and stir. Stir in white chocolate chips.

Drop rounded tablespoon onto greased pan. Bake at 375 for  8-10 min. Remove from pan and cool.
