Macaroni and Tomatoes
Dinner Tonight: Macaroni and Tomatoes,salad
Canned tomatoes, tomato sauce, macaroni pasta, salt and pepper. Growing up, this dish was a family favorite and remains one. I love it with a cold glass of milk. As teens, my sisters and I would often make it for Saturday lunch or when my parents went out for an evening. It is simple, quick, inexpensive and still hits the spot. Much to my surprise, Clark's family use to make the same thing so maybe it is a regional Maine dish. The proportions we use: for each cup of dried pasta, use one 1 pound can of tomatoes and one 8 oz can of tomato sauce. If you like is saucier, add a little water. It scales nicely.
Saturday evening, after returning from a late afternoon walk, macaroni and tomatoes hit the spot.
