Peanut Butter Cookies

Tonight we hosted a reunion of the group that went to Uganda last summer. It was pot luck, and we provided the drinks and dessert. I decided to make a couple batches of cookies, chocolate chip cookies and peanut butter. Both were a hit!


Peanut Butter Cookies

1/2 cup Butter
1/2 cuo peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar packed
1 egg
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Mix thoroughly butter, peanut butter, sugars and egg. Blend in flour, baking soda, baking powder and salt. Cover and chill. (about 1 hour).

Heat oven to 375. Shape dough into 1 inch balls. Place 3 inches apart on lightly greased baking sheet. With fork dipped in flour, flattening crisscross pattern to 2 inches. Bake 10-12 minutes or until set but not hard.


Cook's Note: I live at 5,000 feet so I use high altitude techniques to ensure good cookies. In this recipe I added 1/4 cup of flour and decreased baking soda to 1/2 teaspoon and baking powder to 1/4 teaspoon. Also used a small scoop (2 Tablespoon Size) to ensure cookies came out uniform. After scooping the dough, I rolled into a ball.
