Pounding to save time!

Dinner Tonight:  Oven Barbecued Chicken Breast, Sweet Potato, Salad

Tip: Cutting chicken breasts in half  and pounding with a meat mallet ensures fast cooking and even cooking.

The sweet potatoes were put in the oven an hour before dinner was served. This meal went together with minimum time and prep!

1) Baked sweet potato, peeled and mashed with butter
2) 2 chicken breasts. cut in half, pounded to 1/4 inch thickness. Placed on baking sheet sprayed with cooking spary. Cooked at 450 for 20 mnutes. Turned half way thru cooking and basted with barbecue sauce.


Quick, easy, little cleanup!
