Saturday Lunch: English Muffin Tuna Sandwiches, corn chips & salsa
I often make these for lunch as a quick lunch. It can easily be doubles or tripled of you are serving more folks. I like the tang of sharp cheddar cheese in this recipe but have used pepper jack, American, Swiss, whatever I have on hand. Sometimes, if I have them on hand, I'll place a thin slice of tomato on top.
3 English Muffins, split
1 5 oz. can water based tuna, drained
2 green onions, finely chopped
1 stock celery, finely chopped
1/3 cup shredded cheese
1 Tablespoon ow fat Mayonnaise
Set oven to Broil. Place English Muffin halves on cookie sheet.
In a medium size bowl, mix tuna, onion, cheese, celery, cheese and mayo. Divide mixture among the 6 English muffin halves. Place in oven, Broil 5-7 minutes, or until cheese melts and edges of muffins are brown. Serve.
